Lemon Polenta Cake
This lemon polenta has been a top seller in the tearoom since we added it to the daily menu in 2014. Measuring 25cm in diameter, the whole cake will easily provide 12-14 generous slices, making it perfect for a birthday celebration or as part of a larger teatime spread. Made with polenta (cornmeal) and ground almonds instead of wheat flour, this gluten-free miracle cake is soaked in a citrus dressing, helping it to stay moist, lemony and delicious for up to 5 days when stored in an airtight container.
An absolute treat served up simply with a scoop of ice cream or a light dusting of icing sugar. Your gluten friends will thank you forever, and nobody else will even realise!
